The project, executed by the Institute for Multidisciplinary Research (IMSI) of the University of Belgrade in collaboration with EKOFUNGI DOO, aims to develop an innovative method to extract chitin and chitosan from fungi cultivated in Serbia. The initiative focuses on the technological process involving heating and alkali extraction, followed by deacetylation to produce chitosan. Chitin and chitosan have myriad applications in medicine, environmental protection, agriculture, and the food industry, serving as biocompatible, natural alternatives to synthetic materials. This prrject seeks to demonstrate that fungi are a viable and cost-effective source of these biopolymers. A significant component of the project involves conducting workshops and lectures to motivate other fungi producers to adopt similar innovations. The goal is to establish proof of concept for the feasibility and benefits of this extraction method and to promote sustainable practice among local producers.
