The project titled Application of waste from fruit processing to obtain high-value pectin-based products aims to utilize fruit waste innovatively by extracting biopolymer pectin from the peel of processed waste fruits. The pectin will be used to produce biosurfactants capable of replacing conventional synthetic surfactants and also to create edible active coatings for fruits and vegetables, which can replace conventional plastic and extend shelf life. This initiative, a collaboration between the Faculty of Technology, Novi Sad and ESSALK DOO, seeks to reduce food waste and environmental impact by mitigating greenhouse gas emissions due to discarded fruit waste and the environmental hazards of synthetic surfactants.
